Have a look at the Google Sketchup 3D Warehouse. Just search under "plumbing". This will show you the various ways in which you can manifold pipes.
Next, go to MIT's website, to the open coursework area, and look for the architecture class notes on systems, then cruise through the coursework there.
After that, still on www.mit.edu search on "Open Building" and look for the infrastructure manifolding in the Open Building sections.
Then, go to Popular Science website (popscimag.com, I think), and search for "Open Building" again. They ran some really great photos.
Now that you've got that perspective in your mind's eye, Google "Code Check" + TAunton Press and look at the Plumbing section. Clearest illustrations that I've ever found.
Sketch what you're working on in 3D and take a section for your 2D drawing is the easiest, for me.
There are a number of books on Architectural Drafting Standards which present the subject from a 2D drafting.....
